- 4 pieces of unsalted cod
- 500g onions
- 3 garlic cloves
- 750g tomatoes (diced-9
- 100ml olive oil
- 100g black olives
- ½ glass white wine
- 4 laurel leaves
- Salt, pepper and thyme
METHOD
Cut the garlic into strips and fry it in the oil in a saucepan until it has browned nicely. Cut the onion into slices and brown it a little too. Then add the thyme, the laurel, the white wine, salt, pepper, the diced tomatoes, two teaspoons of sofrito and leave it to cook. When it has caramelized, put it in an oven tray with the pieces of cod on top. Cook it in the oven or 15 minutes at 200ºC. When it is cooked decorate it was the black olives, the laurel leaves and sprinkle it with the chopped parsley.
