Mashed potato balls


Mashed potato balls


INGREDIENTS:

- A kilo and half of potatoes
- 4 eggs
- Breadcrumbs
- Salt and water
- A litre of oil for frying


METHOD:
Peel the potatoes and cut any large potatoes into smaller pieces. Then wash them and put them in a saucepan with water which covers the top of the potatoes and add salt (a small spoonful of salt). Start to cook them and when they reach boiling point turn the heat down and let them simmer until they are cooked. 20 to 30 minutes and/or according to the class of potato you use. When they are cooked, drain them and then immediately start to mash them. Then beat two eggs in two different bowls and add one bowl to the mashed potatoes mixing well until the egg is incorporated with the potato. Then take the mashed potato and start to form them into small balls with your hands, wet them in the remaining egg mixture and then roll them in the breadcrumbs. In a frying pan pour the all the oil and heat it and when it is hot (check with a piece of bread and if it turns brown immediately the oil is ready). Then fry the balls and serve them.
