Prepare the cream by putting the half a litre of milk in the pan with the three spoonfuls of sugar and the cut of lemon. In a cup mix the egg yolks, the rest of the sugar, the yeast, the flour and the cold milk and mix everything well so it does not form lumps. When the milk starts to boil, get some and pour it into the cup carefully so the egg yolks do not coagulate and form lumps. After stirring a bit more pour this into the pan and stir constantly with a wooden spoon and let it simmer for 5 minutes. Take the pan away from the heat and pour it into a deep bowl and let it cool. Prepare the mixture for frying by putting the flour and the salt in a deep bowl, in the centre pour in the wine, the oil and sugar then mix everything well together with a wooden spoon and start adding the cold milk. Let it rest for at least 30 minutes. Next remove the stones from the dates and fill them with the cream. Put the oil on to heat and start to dip the dates into the batter to fry. In small batches put the dates into the oil and take them out when they brown draining them well of the oil. Sprinkle them with sugar when served.
