METHOD

First make the cream; put the milk, 3 spoonfuls of sugar and the lemon rind in a saucepan to cook. In a cup mix the egg yolks, the rest of the sugar, the yeast, the flour and the cold milk and mix everything well so there are no lumps. When the milk starts to boil, take some from the pan and pour it into the cup and mix well so the eggs do not coagulate. Then, once this is mixed well in the cup add it to the pan of hot milk and stir immediately, lightly cooking on a low heat for 5 minutes. Then empty the pan mixture into a bowl and let it cool down. Now, take the raspberries, saving a few, and blend them with a blender or food processor and also add the liquor. After that add the cream to this raspberry mixture and then beat the egg white until they form a stiff peak. Add some sugar and to them and beat again. Serve the raspberry cream in a bowls and decorate with the left-over raspberries and some egg white.
