In a deep salad bowl mix three egg yolks with the sugar until the mixture is fluffy-looking. Then add the flour, the gelatin and the grated almonds. Add the orange juice and the orange rind and mix everything well. Beat the egg whites in a separate bowl until they form a peak and incorporate them into the previous mixture. Get a cake tin, large and round and with a little butter grease the interior and then pour in the mixture. Put the cake mixture into the oven at a temperature of 180º for half an hour. To check to see when it is ready poke it with a needle shape implement after which the needle should be clean.
Make the icing by putting the water and the sugar in a pan and on the heat and when it starts to boil turn down the heat and let it cook on a low heat for a further 10 minutes. Then take it off the heat and then add the butter, which should be soft and the orange essence. This should be poured over the sponge cake when it has cooled down.
