Pineapple Flan

Pineapple flan



Drain the pineapples of their juice and use this to make a caramel. Prepare the caramel with the sugar, water and the pineapple juice. When the mixture becomes thick like caramel, spread the inside of a dish (22 centimetres in diametre) with the caramel. Dissolve the gelatin and then add it to the rum and the lemon juice and mix. In a bowl mix the eggs and then add them to the gelatin mixture and then pour it into the dish and put the dish into the oven for half an hour at a temperature of 180º. Once the flan is cooked take it out of the oven and let it cool before taking it out of the dish. Decorate with slices of pineapple.
