- 600gr of unsalted cod
- Two 500gr lobsters
- 8 soft onions
- 4 mature tomatoes
- 200gr of puré of black olives
- 2dl of olive oil
- 5cl of jerez vinagre
For the vegetables:Blanch the onions and the tomatoes. The tomatoes first should be peeled, deseeded and cut into segments and the onion should be cut long ways.
For the lobster: Boil them in water for 5 minutes in salted water and after that take them out of the water and wash the tail and the claws. Make a sauce with the juice and the head. Using the hands flake the cod and mix it together with the cod, which should be cut into slices, the onion and the tomato segments. Dress with the oil and the vinegar. Pour a little of sauce over and add the parsley.
