Red mullet with vegetable ribbons and piquillo pepper sauce



Remove the bones from the red mullet fillets. Put them in a pan with a dash of oil and salt and pepper. Cut the vegetables into strips, and then into ribbons, and then bleach them in boiling water. Run them under cold water and drain them. Put the vegetables on the plate with the red mullet on top, and decorate with the chopped lobster.
To make the sauce: Grind the piquillo peppers in a blender with the cream, water, salt and pepper, and then drizzle round the edge of the plate.
