Sautéed chicken with celery



Rinse the mushrooms and cut them into large slices. Remove the strings from the celery and cut it into thin strips. Wash the pepper, dice it and remove the seeds and the white parts. Peel the onion and cut it into small pieces. Cut the chicken into pieces and salt them. Dust them in flour, and then pour a beaten egg on to them, before dusting them in flour for a second time. Fry them like this in hot oil, drain them and put them to one side.
Lightly fry the onion until it goes transparent and then add the ginger, the sliced mushrooms, the chopped peppers and the strips of celery, and then leave it to cook for 3 minutes whilst constantly stirring it. Dissolve the cornflour in 1 tablespoon of water and mix it with the soy sauce to thicken it a little. Add the chicken to this sauce and serve it in small individual pots, such as ones for rice or Chinese food.
