Sautéed Veal with Leeks

Sautéed veal with leeks



Rinse the leeks and cut the white bits into thin strips (keep the green bits for a stock). Put the oil and butter to heat in a pan, and brown the meat all over. Take the meat out and keep it hot.
Put the leek strips into the same oil/butter mix and gently fry them for 10 minutes. Add the meat again and cover it with the wine, the lemon juice and the milk. Also add the currants and the herbs. Serve with white rice or pasta ribbons.
