Endive, Chicory and Beetroot Salad

Endive, chicory and beetroot salad



Wash the endive and chop into small pieces. Peel and cut the beetroot into slices. Separate the leaves of the chicory and put them into a salad bowl forming the shape of a flower. Put in the centre the pieces of endive and the slices of beetroot. Prepare the sauce by mixing all the remaining ingredients (apart from the parsley), beating them with a fork and then once done dressing the salad with the sauce. Finish by sprinkling the parsley over the top.
