Aubergine with potato and peppers



Cut the aubergine into cubes, take out the seed and leave them for half an hour covered lightly in salt so the liquid drains from it. Chop the pepper into strips and the potato into cubes. Cut the onion and garlic and fry until slightly brown. Add the other vegetables and stir for a few minutes. Pour in the white wine and leave to simmer until it reduces and evaporates. Add the salt and pepper. Then once reduced, add the stock and cook for half an hour on a medium heat. When they are finished serve warm and garnish with fresh herbs.
