Lightly fried Swiss Chards

Lightly fried Swiss chards



Wash the chards well and cook them in boiling salted water for 15 minutes. Drain well, even pressing them between two plates and then chop them up. Put some oil on to heat in a pan and add the chards with the bacon which should be chopped into pieces. Mix the fried bread pieces with the chopped onion and vinegar in a bowl and then add it to the chards, like a sauce. Lightly fry them, stirring with a wooden spoon so that they stay hot.
N.B You can substitute the vinegar and fried bread for a thick tomato sauce with a pinch of aromatic herbs.
