Stewed Lentils

Stewed lentils



Carefully clean the lentils and soak them in cold water for 12 hours to soak (best overnight). Drain the lentils after they have been soaking and then add them to the pan of water they were soaking in or a fresh pan with the bay leaf, the halves of onion, a clove of garlic (unpeeled). Start to cook these with the pan covered on a light heat or flame and cook them for two hours (according to the type of lentil they are). In a frying pan start to heat the oil, start to fry the bread lightly and once browned take them out and keep them at one side. Take out a bit of the oil and then add the chopped onions and start to cook them and cook them until they go brown. (8 minutes approx) and then throw in the peeled tomato, chopped into pieces with the seeds removed. Refry everything together and then take the pan away from the heat and add the paprika. Mix everything well together and pour in the lentils. In a mortar crush a peeled clove of garlic, some salt, some parsley and the fried bread. Add two or three tablespoons of cooking stock and pour this into to the pan with everything else. Mix everything well and add a little salt and cook everything together for ten minutes. Before serving make sure to remove the bay leaf and the garlic.
